Griddled Avocado with Wasabi & Lime Dressing

A light salad of avocado, courgettes and peppers. This is also delicious with a little smoked chicken or cooked salmon mixed in. Ingredients 1 avocado, sliced 1 courgette, sliced 2 peppers, sliced Rocket or salad 1 bottle Atkins & Potts Wasabi & Lime Dressing Method Drizzle a little oil into a griddle pan and add the sliced courgette and avocado. Griddle for a few minutes until lightly charred. Mix the courgette and avocado with the peppers and salad. Pour the Wasabi & Lime Dressing generously over the salad.
